Citric acid is one of the most commonly used acidifiers. Their purpose is to give foods a pleasant, sour taste.
In addition, citric acid is capable of forming complexes in conjunction with heavy metals. Heavy metals can accelerate the process of oxidation in foods. Citric acid is therefore often used to protect fats and oils. It supports the action of antioxidants, and it is therefore referred to as a “synergist” in the context of antioxidants. Used as an antioxidant, citric acid preserves the quality of fats, colours, flavours as well as the vitamin content of many foods. In the sterilisation of cream and milk and in the melting of cheese, it prevents the solidification of proteins. Moreover, citric acid promotes the reddening of meat and improves the baking properties of doughs and flours.
Today the industrial production of citric acid employs a biological process based on microorganisms, in particular the fungus Aspergillus niger, and a glucose culture medium.
Under normal conditions (room temperature) citric acid presents as a white, crystalline powder. It is available as both an anhydrate (water-free) and a monohydrate. In addition, HELM offers the product in various mesh sizes/ granulometries.
Examples of applications
Citric acid has wide applications and is found in many foods and beverages, such as soft drinks, candies, sweets, jams, desserts, fruit juice and fruit nectar, sliced packaged vegetables, fruit and peeled potatoes, cheese and meat products, as well as pasta.
In addition, citric acid is used as a technical excipient in the production of edible fats and in the treatment of fresh fish. In other technical applications, citric acid also serves as a water softener and descaling agent in laundry detergents and cleaning agents, for example.
